Richard, originally from Colorado and a CU Boulder Graduate who now resides in California brings over 10 years of experience in wine production and planning, with winemaking and laboratory roles at The Wine Group, Constellation Brands, and Monterey Wine Company. Holding a winemaking degree from UC Davis and an MBA from Sonoma State University, Richard has managed a wide range of production programs and stylistic approaches, giving him a uniquely practical perspective on the use of oak alternatives.

Having worked across diverse varietals, production scales, and commercial objectives, he understands how oak products can be applied strategically at multiple stages of production—from fermentation and aging through blending and finishing—to achieve specific sensory and structural outcomes. His hands-on experience allows him to translate technical options into practical, real-world solutions that align with stylistic intent, operational constraints, and long-term program goals.

In his new role, Dempsey will work closely with producers and industry partners, advising on the selection and application of Canadell’s premium oak adjunct portfolio. His focus will include program development, technical consultation, and close collaboration with winemakers, distillers, and beverage producers seeking precise, repeatable oak solutions tailored to their production goals.

Supplier Spotlight: @drunkturtle_amphorae & @YangarraEstate
As fall settles in and the last of the reds reach the crush pad, we’re shining a light on one of the more fascinating cross-continental collaborations in winemaking: between Italy’s Drunk Turtle and Australia’s Yangarra Estate.

At first glance, the two couldn’t be farther apart: Drunk Turtle, a family-run workshop near Pisa crafting amphorae from cocciopesto, an ancient Roman blend of clay, marl, limestone, and terracotta, and Yangarra, a biodynamic Rhône specialist rooted in South Australia’s McLaren Vale. Yet together, they’re creating something remarkable.

Winemaker Peter Fraser and his team at Yangarra use Drunk Turtle’s Opus amphorae exclusively for their Hickinbotham Clarendon old bush-vine Grenache, from fermentation to maceration to aging. The result? A wine that captures both fruit purity and savory complexity, with a texture that mirrors the sandy soils where those old vines grow.

Gentle native ferments. Long maceration. No new oak, just the slow breath of cocciopesto guiding the wine’s evolution. The outcome is expressive yet refined: a Grenache vibrant enough to chill, layered enough to linger.

From Pisa to McLaren Vale, it’s a story of craftsmanship meeting curiosity that proves that when history and innovation meet, even across continents, the results can be beautifully seamless.

Supplier Spotlight: @tonnellerie_billon - Beaune, France

Some partnerships in Burgundy are destined. One of them is the long-standing relationship between Tonnellerie Billon, managed by Vincent Damy, and Domaine @antoine.jobard in Meursault.

Billon has been crafting barrels since 1947, and under the Damy family’s stewardship, the cooperage continues to honor tradition while refining its craft. Their focus: precision, restraint, and respect for terroir.

The Jobard family, whose roots in Meursault reach back to 1860, has built a reputation for chardonnays that are focused, reductive in nature and age worthy. Fifth-generation winemaker Antoine Jobard carries that legacy forward, applying the same philosophy to pinot noir from recent holdings in Pommard, Beaune, and Volnay.

Through years of refinement, Antoine has found the perfect balance with Billon: Allier oak, 2-year air dry, light long toast in both 228L and 400L. For Chardonnay, it adds structure and length while keeping aromatics taut and precise. For Pinot Noir, it lends a subtle savoriness and length on the palate, always in harmony with the fruit.

📸 In the cooperage, the toasting room itself is a story: Chief Cyril Caplet and his cousin Thomas, both awarded Meilleur Ouvrier de France like Vincent Damy, take great pride in their profession, especially the house toasting stage, considered the most reflective of the craft and the main differentiator between different cooperages.

Supplier Spotlight: @tavaceramics Ceramic Amphora
Trentino, Italy
Amphorae may be one of the oldest tools in winemaking, but TAVA is giving them a modern Italian twist. Crafted in Trentino from a patented clay blend, TAVA’s ceramic vessels are prized for their precise porosity and clean, oak-free expression of fruit.
Two very different estates are showing just how versatile these amphorae can be: @ettoregermano in Barolo’s Serralunga d’Alba and @chateaularmande in Bordeaux’s Saint-Émilion.
In Piemonte, Sergio Germano uses TAVA vessels to coax out the shy aromatics of the native Nascetta grape. By fermenting and aging on skins in 320L and 750L amphora, he captures texture and complexity without the influence of oak.
In Bordeaux, winemaker Véronique Corporandy blends her Grand Cru Classé reds with a portion aged in TAVA amphora. She loves the way the vessels polish tannins, preserve freshness, and, as she jokes, “they’re not ugly!”, and argues they complement the estate from an enotourism perspective, while remaining a winemaking tool.

Supplier Spotlight: @tonnelleriedamy – Meursault, 🇫🇷. As the 2025 North American harvest approaches, we’re proud to highlight one of Burgundy’s most prestigious cooperages. Founder in 1946 and led by third-generation cooper Jérôme Damy, Damy crafts on average 18,000 barrels annually from single-origin French oak sourced from the most sought-after forests in France.

In Maranges, Damy works with their neighbor and client @domaine.elodie.roy run by winemaker Élodie Roy who works exclusively with her husband who is also Damy’s French Sales Manager: Etienne Martin @etiennemartin21 when it comes to barrels. Élodie, who trained for over a decade at Vosne-Romanée’s famed Domaine Anne Gros, now produces elegant, terroir-driven Pinot Noir, Chardonnay, and Aligoté on her 24-acre estate spanning Maranges and Santenay.

In her cellar, Damy barrels are key to her style. She blends Damy Allier M+ toast for structure and aromatics with Damy Exclusive LL++ toast for restraint, focus, and tension — a combination that brings freshness, brightness, and balance to her wines.

Supplier Spotlight: European Coopers Hungary
As summer begins, we’re spotlighting one of our long-standing cooperage relationships: European Coopers Hungary, producers of premium 100% Hungarian oak barrels — and trusted partners to none other than Italy’s legendary Marchesi Antinori.

Founded in 1997 by Master Cooper Kristóf Flódung, European Coopers Hungary was established in collaboration with icons of the Italian wine world — including Piero Antinori, Eugenio Gamba, and Jacopo Mazzei — with one goal: to craft world-class Hungarian oak barrels tailored for noble Italian wines.

Located in southern Hungary near the Mecsek oak forest, the cooperage is fully vertically integrated, managing every step from forest to toast. With just 10 coopers and an annual production of 2,500 barrels, this is craftsmanship at its most focused and intentional.

At Marchesi Antinori’s Badia a Passignano estate in Chianti Classico, new 300L European Coopers puncheons made from Tokay and Mecsek oak are used to age Sangiovese after fermentation — bringing richness, spice, and structure to the wine.

Hungarian oak (Quercus Petraea) shares its species with French oak, but its distinct growing conditions yield darker, spicier aromatics — especially well suited to elegant reds like Sangiovese.

Family-owned since 1880, Schneckenleitner crafts premium Austrian oak and acacia casks, puncheons (500–800L), and upright conicals from their modern, vertically integrated facility along the Ybbs River. Their work is trusted in top cellars across Europe and North America.

Bouchard Cooperages’ Master Coopers USA 100% American Oak barrels are made in the USA. It is a proud member of 1% For The Planet, an International Organization founded by Patagonia and Yvon Chouinard whose members contribute at least one percent of their annual income to environmental and conservation causes.

Volunteer hours in local community environmental efforts can be applied towards members’ 1% commitment. That is why, for the third year in a row, the team at Bouchard Cooperages has gotten out of the office and involved in local state park initiatives. These have included Bothe-Napa Valley State Park, Armstrong Redwoods State Natural Reserve, and this year, Skyline Wilderness Park and specifically the Suscol Headwaters extension to the Park.

Activities included trail maintenance and cleanup efforts from the direction of Ryan Ayers from the Napa County Regional Park & Open Space District on the newest section of the trail used by hikers and of course mountain bikers. Once the fog cleared, the view of the Napa and Sonoma Valleys and the distant Mt. Tam and Diablo were truly special.

Work on the trails started early, and then, in true Burgundian fashion, it was time to “casser la croûte” with local cheese and charcuterie from the Fatted Calf and taste some gems from winery partners including Morgen Long, Walter Scott, Littorai, Occidental, and Dunn Vineyards. #TeamSpotlight ✨ Meet Roberta Montero

Born in Mexico City to American diplomats, I graduated from Georgetown University’s School of Foreign Service. After traveling through Europe and the Near East, I spent time in a German village dedicated to grape growing and winemaking, which sparked my love for the wine industry.

I moved to northern California and took a temporary position at Calera, meeting influential figures like Josh Jenson and Randall Graham. This led to roles at Navarro Vineyards, Oakville Grocery, Duckhorn Vineyards, and Pinot Noir America. Eventually, I began working with Vincent Bouchard, managing sales and learning to evaluate how barrels impact wine. This role took me across the globe to wineries in the USA, Canada, Australia, New Zealand, Chile, and Argentina, blending my passion for languages, economics, and travel.

Years later, I joined John, my husband at the time in a new venture in New Zealand’s Central Otago. We loved the region’s tight-knit community and potential for Pinot Noir. Balancing vineyard work, winemaking, and barrel sales in two hemispheres was both challenging and rewarding. Now, after two decades in New Zealand, I’ve returned to the U.S., splitting my time between California and Oregon.

After 30 years with Bouchard Cooperages, the adventure continues.

Favorite part of your job?
Collaborating with winemakers to match barrels to their vision and enhance vineyard expression.

Favorite varietals and regions?
Pinot Noir, especially from Oregon and Central Otago, NZ.

Favorite barrel combo?
Billon barrels, which pair seamlessly with Pinot Noir to enhance the varietal’s character.

Hobbies?
Anything on the water – sailing, kayaking, vintage boats, diving, and snorkeling.

Wine and wood have been a part of Vincent’s life since birth. Born in Beaune and raised at the Bouchard Père et Fils winery, Vincent is a ninth-generation vineyard manager and winemaker.

During his childhood, he would work alongside his father, co-director of the winery, on the family’s 200 acres of Grand and Premier Cru vineyards.

While working on degrees from the wine schools of Beaune, Macon, and Bordeaux, Vincent spent 50% of his free time working at the winery and in the vast family-owned forests in Burgundy and Alsace. Led by his grandfather, he would walk for miles to evaluate trees for the oak harvest.

One summer, at Bouchard Père et Fils, he hosted Robert Mondavi, who offered to return the favor and invited him to work in California. Vincent took him up on his offer and shortly afterward decided to become one of the first to bring French oak barrels to the United States and beyond.

Bouchard became a Master Cooper in 1979, helped pioneer the silicone bung in 1980, and pioneered initial experiments with different toasting levels in 1981. Before this time, heat was used to just make the wood pliable enough to bend and shape the barrel.

In 1984, Bouchard commissioned studies on the importance of forest origin and grain tightness, as well as the effects of geography on stave aging. He was the first to introduce French oak specifically from the Vosges to the U.S. market. In 1985, Bouchard introduced the shrink-wrapping of barrels to prevent damage while preserving humidity during shipment.

After serving the international wine market for over forty years, Bouchard Cooperages is always one step ahead of the curve and fully prepared to supply a constantly changing and evolving wine industry. Today, Bouchard Cooperages is proud to work with 6 Cooperages, a French oak alternatives supplier and give tank manufacturers.

Stock Puncheons …. And why producers love them!

Every year Bouchard Cooperages works with more producers regarding @tonnellerie_billon , @tonnelleriedamy , @tonnellerie_maury_et_fils , @fassbinderei_schneckenleitner , and @european_coopers with 500L puncheons and brings in stock puncheons in different specs while awaiting what the vintage has to offer.

From customer feedback and global winemaking trends, 500L puncheons (and 600L Demi-Muids and large formats in general) are appreciated because of:

• Less oak to wine surface area volume resulting in less oak and toast impact on the wine
• Slower rate of micro-oxidation
• Better thermal inertia regulation on ferments compared to 225/228L barrels
• Lower cost per Liter compared to standard 225L/228L barrels
• Longer life/extraction
• Higher value on the secondhand market

@drunkturtle_amphorae produce opus out of Cocciopesto: an ancient Italian blend of crushed stone and terracotta. The egg-shaped Opus encourages lees suspension and the thermal inertia qualities make the material optimal for fermenting and aging both whites and reds.

With the Paris Olympics approaching, a special spotlight on @tonnellerie_maury_et_fils and its French Olympic Roots.

Serge Maury - French Olympian:
Development of the cooperage was undertaken by the second generation cooper: Serge Maury who expanded the activity of the Maury cooperage and solidified its reputation among Bordeaux's most important Châteaux. In addition to Serge's passion for the wine and cooperage industry, he loved sailing and in 1972 would win a Gold Medal for France in the "Finn" sailing discipline at the Munich Summer Olympic Games--after also being the quadruple French Champion and double European and World Champion.

Today - Mathieu Maury:
The third generation of the Maury cooperage now sees Mathieu at its helm, who at a young age joined his father at the cooperage's Quai des Chartrons' location to repair barrels. Mathieu has grown production to between 3,000 to 4,000 barrels annually. Mathieu and his team oversee all parts of the business and Mathieu sees it as his responsibility to consistently visit and taste with his customers throughout the year, in order to ensure that he has his finger on the pulse of current vintages and how his barrels and puncheons are complimenting his beloved Bordeaux Châteaux partners.

The Cooperage:
The cooperage is now located in Saint-Caprais, right outside of Bordeaux, and benefits from Bordeaux's maritime cold, rainy, and humid weather to optimally naturally season 100% Quercus Petraea French Oak staves. For barrels reserved for wine production, a selection of either Center of France Tight Grain or Center of France Extra Tight Grain oak is available. Open-grain Limousin oak can also be requested for spirits production

Range & MC2 Toast:
Traditionally speaking, the Maury style has matched its Medium Toast with Bordeaux's warmer and more mature vintages, and its Medium Plus Toast with cooler and fresher vintages. However, with a changing climate, style of wines, and after conversations with producers, Maury created a Medium Long toast (positioned between Medium and Medium Plus) as well as the now-famous "MC2" toast that is used on leaner and fruitier styles of Bordeaux varietals. #tonnelleriemaury
