Billon
- Chardonnay, Pinot Grigio
- Barbera, Merlot, Nebbiolo, Pinot Noir, Sangiovese, Syrah
Cadus
- Chardonnay
- Cabernet Franc, Pinot Noir
- All other varietals where a subtle, fine-grained oak influence is desired
Damy
- Chardonnay and other barrel-fermented whites such as Viognier and Sauvignon Blanc
- Pinot Noir, Syrah and other red wines when a round, creamy texture is desired
Vicard
- Dessert Semillon
- Cabernet Franc, Cabernet Sauvignon, Merlot, Petit Verdot
