CADUS BARREL STATS - PRICE LISTS

Tonnellerie Cadus is located in Ladoix-Serrigny, just north of Beaune. CadusCadus was created to meet the increasing demand around the world for Ultra-Premium barrels using Burgundian firing techniques. Cadus is managed by François "Paquito" Barbier, who oversees over 30 experienced coopers.

The Cadus partnership is the brainchild of Vincent Bouchard, whose experience and reputation enabled him to select and inspire a talented group of Cadus teamexperienced individuals for a successful business venture. The Cadus partners include Maison Louis Jadot, a Burgundian winery renown for the quality of its wine; Vicard Tonnelleries, a sixth-generation cooperage located in Cognac; Vincent Bouchard, barrel broker and owner of Bouchard Cooperages (since 1980) and ninth-generation Burgundian enologist. Their original goal was to make the best custom-made barrel available for both Chardonnay and Pinot Noir. Cadus barrels are now used with many varietals where a subtle oak influence and fine-grained tannins are desired.

Cadus uses only wood air-dried for a minimum of 30 months, maintains total control over forest origin of staves, and implements strict quality control measures.

French oak origin is now certified by an independent legal auditor. Staves are manually sorted and certified as being air-dried over 30 months by the same independent legal auditor.

Paquito & DominiqueSince mid-2003, toasting is strictly measured and controlled by temperature and time. To ensure consistency in toasting and flavors, stave temperature is monitored with an infrared thermometer to confirm that the interior temperature of the barrels reaches a minimum peak of 390 degrees Fahrenheit. Timing is controlled by literally writing the start and finish time for each stage on each barrel, synchronized to a timing clock in the firing area:

Medium 40 minutes toasting
Medium+ 60 minutes toasting
Medium++   70 minutes toasting

Quality control in their barrel inspections continues to be strengthened. After toasting, each barrel is individually inspected immediately for toast level and blister control. A second full inspection is made as the barrel enters the warehouse to check and verify toast level, hoop position, and overall quality of craftsmanship.

Strategic TCA-free quality control: A TCA control program is now in place with the partnership of VECT'OEUR, an independent lab in Beaune. They perform stave yardan annual environmental R/E Halophenols & Haloanisols control of wood inventory and factory.

Additionally, they conduct a bi-annual warehouse environmental R/E Halophenols & Haloanisols control and a bi-annual inspection of the water used in the barrel fabrication process to assure that the active carbon- filtered water is Haloanisols free.

In 2007 Cadus fabricated over 17,000 barrels and sold out before the end of the season. We expect them to sell out even earlier in 2008.

  • Chardonnay
  • Cabernet Franc, Pinot Noir
  • All other varietals where a subtle, fine-grained oak influence is desired

In 1999, Cadus became the first French cooperage to offer barrel sales by credit card. This payment option offers "transparent" currency exchange, greatly facilitating barrel payment.
