of just over 12,000 barrels. Jacques Damy, Vincent's father, is administrator of Les Tonnelleries de Bourgogne which oversees Tonnellerie Billon's and Tonnellerie Damy's operations.
Billon barrels have received the CTB (Centre Technique du Bois)
stamp of approval, which guarantees to wineries and consumers
around the world that these barrels meet the highest standards of
quality in the industry. Of the more than 40 cooperages in France,
only 8 cooperages have been certified by CTB.

We expect the larger format puncheons to play an increasing role with Chardonnay and Italian varietals, where the winemaker is looking for conservative aromatic and flavour contributions while benefiting from barrel maturation. Billon barrels give a wonderful length to the palate, while contributing baked, spice characters that are complimentary to varietal characters.
